Blogmas 2020: day 17

Hurray! This is the first time in at least a week I haven’t been forced to stay up til midnight for the sake of the elf. 😅

One thing that is difficult during the holiday season, at least for me, is trying to remain consistent with weight loss. I started the keto lifestyle, 2 years ago now? I can’t remember. Anyway, this year has already gotten to me enough as it is with lacking the motivation. The holidays have been making it a bit more difficult.

I want to consume all the yummy things. Of course most things have a keto alternative, but I am lacking the will power. I haven’t felt much like extravagant meal making or baking. I have even opted for the easy options that aren’t keto friendly. Some days, I really just am not mindful enough. Other days, I am too tired and hungry to truly care. I have really been striving for sticking to keto and having extras in moderation.

After dinner tonight, I really wanted some sweets. I was not feeling right as I have been making some changes the last couple days that are finally starting to hit my system. So, I figured I needed a boost and decided protein was probably the way to go. I decided on making some keto peanut butter chocolate chip cookies.

Super easy and delicious.

Ingredients

1 cup peanut butter

1 cup stevia

1 egg

Sugar free chocolate chips (optional)

Directions

Combine all ingredients.

Use a table spoon to measure “dough” into balls on a non stick cookie tray. I use a silicone baking mat (highly recommend!)

Preheat oven to 350°

After you have all the dough balls on your pan, evenly spacedof course, use a fork to gently push down the top

I like to make cross marks in the top.

Bake for 10 minutes, turning the pan at the 5 minute mark.

They will be squishy when they come out. Let them cool for at least 10 minutes before trying to move or eat.

Wa-La!

Everyone approved of them and were begging for more. Sweets and goodies just seem to take over this time of the year. Luckily there are still options to stay on track if and when you want to.
